Rock, Paper, Scissors is one of my favorites for big groups!
Love your straight-to-the-point, yet insightful description.
Note on the "universally known" - it may depend on your geography. Once I tried to run this in a session in Dubai, where multiple countries from the Gulf region were present, and 50% of the participants did not know the game.
& small improvement tweak: I like dividing the big group into two halves before they start playing.
This turns them into "teams" in the beginning; they searching for their "champion" to represent them in the final battle.
And it gives me more control over what's going on!

I love the tweak about dividing the group in smaller groups to create team camaraderie and spirit right from the start 😀
